Rice Grades & Factors

Grades Overview

Rice is made of Grade 1, Grade 2, and Grade 3 — key quality parameters include percentage of head rice, broken rice percentage, maximum quality of moisture levels, chalky grains, impurities, opaque/discoloured grains, and the absence of damaged or chalky kernels at premium levels.

Key Factors for Rice Grading

Head Rice Percentage

Above 95%; less than 15% broken kernels more generally.

Milling Degree

Ranges from under-milled to extra well-milled; affects the whiteness and colour. Brown rice retains the bran and germ; white rice has the bran removed. 20–25% of rice kernels broken = 20 broken, less than three-fourths whole kernel, considered low quality (broken rice).
